Chanar Malai Roll
Chanar malai roll is one of the most technically demanding Bengali sweets to make, requiring skilled hands and years of practice. Fresh chhana is spread paper-thin on a flat surface, steamed until spongy, and then carefully rolled around a filling of thickened malai (clotted cream) flavoured with cardamom and crushed pistachio. The roll must be handled gently as the chhana crepe tears easily if overworked. This sweet is believed to have evolved from the patishapta tradition of Bengal, where thin crepes are filled with sweetened coconut or kheer. At Noni Sweets, we use only full-cream milk reduced slowly for the malai filling, giving it a natural richness without any thickeners. Each roll is sliced to reveal the cream spiral inside and garnished with pistachio slivers. Chanar malai roll is a favourite at upscale Bengali events and a premium gifting choice. Fresh daily from Noni Sweets, delivered to Gulshan and Banani, Dhaka.
