Ilish Peti Sondesh

Ilish peti sondesh is a modern Bengali creation that pays tribute to the hilsa fish, the most celebrated ingredient in Bengali cuisine. The outer shell is made from fresh chhana, slow-cooked with sugar on a low flame until it reaches the perfect sandesh consistency. Inside, a rich khoya filling flavoured with cardamom and a hint of saffron. Each piece is hand-moulded into the distinctive belly shape of the ilish and finished with crushed pistachio. The making requires patience as the chhana must be stirred continuously to prevent burning while achieving a smooth, fudge-like texture.
