Khirer Chap Sondesh
Khirer chap sondesh belongs to the oldest family of Bengali sweets, the sondesh, which predates even roshogolla in Bengal's culinary history. The word 'chap' means pressed or stamped, referring to the decorative wooden moulds traditionally used to shape each piece. At Noni Sweets, we start by reducing full-cream cow's milk for hours until it thickens into a dense kheer. This kheer is then folded into fresh chhana, sweetened with sugar, and cooked on a low flame while stirring constantly until it reaches a firm yet crumbly consistency. The mixture is pressed into carved wooden moulds to create intricate patterns, then topped with crushed pistachio. No artificial flavouring is used; the deep dairy aroma comes entirely from the slow reduction process. Khirer chap sondesh is the sweet Bengalis bring to important occasions: first-visit gifts, religious offerings, and elder blessings. Handmade fresh at Noni Sweets, delivered to Gulshan and Banani, Dhaka.
